Necesary Tools
2 baking trays
Baking paper
2 large mixing bowls
Electric or hand mixer
Wooden spoon
Silicone spatula
Ice cream scoop or cookie scooper
Measuring cups and spoons
Sieve
Cooling rack
Ingredients
225g unsalted butter, at room temperature
200g dark brown sugar, well compacted
100g granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract
300g all-purpose wheat flour, sifted
1 teaspoon of baking soda
1/2 teaspoon fine salt (3g)
300g semi-sweet chocolate chips
Step-by-step preparation
Prepare the oven and trays: Preheat the oven to 180°C (350°F). Line two baking trays with baking paper to prevent cookies from sticking.
Cream the butter and sugars: In a large bowl, cream 225g of unsalted butter at room temperature (18-20°C) with 200g of well compacted dark brown sugar and 100g of granulated white sugar. Use an electric mixer on medium-high speed for 3-4 minutes until smooth and creamy. Scrape down the sides of the bowl with a spatula to ensure a uniform mixture.
Add eggs and vanilla: Stir in 2 large eggs, one at a time, beating well after each addition. Add 2 teaspoons of pure vanilla extract and mix until well blended.
Mix the dry ingredients: In another bowl, sift 300g of all-purpose flour, 1 teaspoon of baking soda and 1/2 teaspoon of salt. Mix these dry ingredients well.
Combine the wet and dry mixtures: Gradually add the dry ingredient mixture to the butter and sugar mixture. Mix on low speed or with a spatula until flour is just incorporated.
Incorporate the chocolate chips: Add 300g of semi-sweet chocolate chips to the batter and mix gently with a spatula until evenly distributed.
Form the cookies: Use an ice cream scoop or cookie scooper to form uniform balls of dough about 2 tablespoons each. Place them on the prepared pans, leaving enough space between them to allow them to expand during baking.
Bake the cookies: Bake the cookies for 10-12 minutes, or until the edges are lightly browned. The center may look a little soft, but it will firm up as it cools.
Cool the cookies: Take the pans out of the oven and let the cookies cool on the tray for 5 minutes. This allows them to set and firm up a bit.
Transfer and enjoy: After 5 minutes, carefully transfer the cookies to a wire rack to cool completely. Once cool, they are ready to enjoy.
Tips
Make sure the butter and eggs are at room temperature. This will help them mix better, resulting in a more uniform texture.
Mix dry ingredients until just incorporated. Over beating can over develop gluten, resulting in tough cookies.
Use an ice cream scoop or cookie measurer to ensure that all cookies are the same size and bake evenly.
For cookies with a better flavor and texture, wrap the dough in plastic wrap and refrigerate for at least 24 hours before baking. This allows the flavors to develop and the flour to absorb more moisture.
Use an oven thermometer to make sure the temperature is exactly 180°C. Ovens can vary, and an accurate temperature is crucial for perfect cookies.
